This wine, appreciated by the most refined palates, is made only from Chardonnay grapes.  It is recognized by its lightness, its elegance and the finesse of its bouquet.  It was mentioned in the 2002 Hachette Guide.

 

This wine makes a perfect pairing for aperitifs, it balances with earthy notes (asparagus, artichokes, onion, mushrooms, truffles) or fish dishes, especially shellfish, and starchy dishes, such as pasta, baked goods, fried food, and desserts.

When the celebrated French wine competition, Chardonnay du Monde 2020, gives this Cuvée a Silver Medal, you know you're in for a distinctive treat. What makes this wine so distinguishable from others in its field is how the unique minerality of the terroir shows up in the bouquet.  Its acidity and its aromatic strength create the perfect environment for an intense flavor experience.

 

This Cuvée is made only with the best white grapes from the vineyards of the Coopérative. Every single grape is carefully chosen based on its quality and in fact only 10% of the total grapes are selected to create this unique champagne.

 

The balance of acidity and aromatic flavours pair extremely well with strong flavours, think aged cheese and wild game. Any food with aromatic notes create an interesting dynamic with this Cuyée - mushrooms, artichokes, onions, asparagus, sauces. It is truly sublime with truffles. Or, add complexity and interest to a lighter option such as crepes, lasagna, shellfish, or a charcuterie board.

When you pour this Cuvée, you'll notice its beautiful golden colour and a light mousse that develops into a perfect layer.

 

Lively, delicate bubbles rise in cords to the surface leading you into the first scent — subtle and fruity with notes of mandarin, quince, peach, plum, red apple and wild strawberry.

​

This wine has a complexity that will envelop and surprise you with its special "essential, earthy" note.

​

It is a Champagne with a moderate dosage (9.5 gr / l.), which feels elegant on the palate.  The structure has mineral notes and a lingering,  pleasant finish — a fine example of Pinot Meunier.

​

Ideal for aperitifs as well as to accompany festive canapés, appetizers, and meat or fish dishes. And with premium ingredients like caviar, truffles, oysters.

For this Cuvée, black berries from the vineyards between the regions of Janvry, Getmigny and Rosnay have been selected. This terroir provides grapes (three vintages of Pinot Meunier at 85% and Pinot Noir at 15%) that are uniquely flavorsome.

 

The fragrance brings fresh notes of minerality, citrus fruits, unripe red fruits, white flowers, lime, bread crust and nuances of yeast. At the palate, mineral and savory notes enhance the structure with a final note of ripe fruit to round out and reveal the completeness of this unique Champagne.

​

This wine has been rested on the lees for three years with three months in the cellar after dégorgement to enhance the complexity of its flavor.

The delightful scent of this wine will meet you immediately and transport you to beautiful Alsace. This is a faithful example of a Gewürztraminer from the Alsace region, right down to its stunning clear, golden yellow color.

The structure is generous and the wine is embellished with notes of exotic fruits, citrus, and candied oranges.

These flavors are wonderful when paired with Asian dishes, such as Chinese or Thai, as well as starchy dishes (like rice), vegetables, or simply as an aperitif. The strength of the sweet fruits has the ability to bring strong flavored dishes into balance and create a very special dining experience.

The special type of limestone found in the North of Burgundy (Auxerre) gives this wine its softness and fragrant aromas.  White fruits and a hint of fresh herbs make this wine perfectly suited to summer meals of asparagus, seafood and goat's cheese. 

 

There's a definite stamp of minerality in the Sauvignon Blanc, bringing to life the terroir in which the grapes were grown.  This is a wine steeped in history and character.  Each day, the Bailly-Lapierre Cellar Master attends to the bottles in the cool, semi- darkness of their ancient quarry, developing each of the special flavor notes you can find in this wine.
